Description: Learn how to run a Labor Productivity report on SkyTab Business Intelligence (STBI).
The Labor Productivity is a fantastic report to help control labor costs. To access the report, click on Labor/Payroll > Labor Productivity.
The first 3 columns talk about sales, #guests, and #tickets. The next three columns determine your labor cost.
Lbr/Hrs: this column tells you how many people were on the clock. We will run the report by hour, and you can see how many employees per hour. If the hour said 11.57, that would tell me were 12 employees on the clock. A partial hour represents an employee.
Lbr $:The dollar amount of labor used for the time period selected.
Note: It is very important each employee has a wage in the POS system. If you are missing wages, the labor % will be inaccurate.
Lbr %: The labor % for the time period selected. Lbr $ divided by Sales$
STBI Tip:
A. From years of experience, typically, a restaurant will have too much opening (prep) labor that can be reduced.
B. Between the hours of 2:00 to 5:00 PM, there is labor that was not sent home after lunch that can be sent home.
C. Check the closing labor to ensure the right number of employees are closing the restaurant. When you consider the average restaurant wage of $15 per hour and cutting 3 hours a day is $45 times 7 days equals $315 for the week, or you can put $16,380 in your pocket with some simple changes.
Below is the Labor Productivity by the hour.
As you can see in the highlighted hour, the Lbr % was 48%. Notice the Sls/Hr was only $6.78. If this report is used to its fullest, it can help to reduce labor costs.
