Server Productivity Report Guide
To access this report, log in to Business Intelligence and select Productivity > Server Productivity.
Purpose of the Report
The Server Productivity Report helps you evaluate server performance by measuring:
- Guest Average
- Ticket Average
- Overall sales productivity
This report identifies:
- Servers with the highest guest averages
- Servers with the lowest guest averages
Guest average reflects how effectively a server is selling to guests (upselling, suggestive selling, add-ons, etc.).
Note: Guest and ticket averages are displayed at the bottom of the report in the totals line.

Identifying Opportunity: Low Guest Average
To determine how much revenue a low-performing server may be missing:
- Locate the server’s Guest Average.
- Subtract it from the Store Guest Average (shown in the totals line).
- Multiply that difference by the server’s number of guests served.
Formula: (Number of Guests) × (Store Guest Avg – Server Guest Avg)
This calculation shows how much potential revenue is being left on the table.
Coaching Strategy
To improve performance:
- Pair lower-performing servers with top-performing servers.
- Have them shadow during shifts to learn upselling techniques.
- Provide targeted coaching on suggestive selling.
Using Group By: Daypart
Select Group By > Daypart to analyze performance by:
- Breakfast
- Lunch
- Dinner
This helps identify which servers perform best during specific meal periods.
High Sales but Low Guest Average
If a server shows high total sales but a low guest average, it may indicate:
- They are handling many tables
- They are taking orders rather than actively selling
Recommended Adjustment: Reduce the number of tables assigned per shift so they can focus more on selling and improving guest engagement.
When used consistently, the Server Productivity Report becomes a powerful coaching and revenue optimization tool.
