Product Mix Report Overview
The Product Mix report is a powerful tool used to analyze the products you are selling. You can group the report by:
- Revenue Class
- Department
- Menu Items
The report allows you to:
- View performance by store
- Drill down to see which employee sold the most of a specific menu item
- Filter data using Revenue Class, Department, or specific Menu Items
To access this report, log in to Business Intelligence and select Sales/Guests > Product Mix.
By default, the Group By field is displayed, and Revenue Class is highlighted.
Grouping by Revenue Class
- Select a Revenue Class (example: Food).
- Select Drill to Departments.
- To drill further, select Drill to Menu Items.
Notes: Use Day Parts to see what menu items are selling during specific times of day. You can drill down even further to the hour or 15-minute intervals. This detail is especially helpful for forecasting and prep planning (for example, knowing what types of chicken are selling most in a chicken restaurant).
Drilling to Employees
When viewing by Menu Item (example: All-Star Breakfast), you can:
- Drill to Stores
- Drill to Day Parts
- Drill to Employees
Filtering the QTY column allows you to see which employee sold the most. For example, the report may show that Laumer sold the highest quantity.
This helps identify top-performing employees for specific items.
Using “Filter by Items”
The Filter by Items option is located at the top of the Product Mix report.
You can create filters by:
- Revenue Class
- Department
- Menu Items
Filter by Revenue Class
Step 1: Locate Revenue Class IDs
- Open the Product Mix report.
- Drill to Revenue Class.
- Note the ID numbers in the first column (example: Beverage ID 2, Food ID 3).
Step 2: Create the Filter
- Select the Filter by Items form.
- Enter:
- Name: Beverage Revenue Class
- Revenue Class: 2
- Check Global if you want all users to access this filter.
- Select Save Filter.
Step 3: Use the Filter
- Select Saved Filters.
- Select Beverage Revenue Class.
- Select Apply Filter.
The report will now show all Beverage Revenue Classes for all stores.
To view menu items:
- Change Group By from Store to Menu Items.
Important: After using a filter, you must select “Clear Filter” to return to viewing all data. You can confirm a filter is active by looking at the Report Name at the top right of the screen. When cleared, the filter name disappears.
Filter by Department
To filter specific departments within a Revenue Class:
- Open Product Mix.
- Select a Revenue Class (example: Food).
- Group by Departments.
Each department displays its ID number in the first column.
Example: Create a report for Entrees and Desserts
You want:
- Revenue Class: Food (ID 3)
- Department: Entree (ID 7)
- Department: Dessert (ID 11)
Setup Steps
- Select Filter by Items.
- Enter:
- Name: Entree and Dessert Department Report
- Department: 3-7 (Revenue Class-Food ID 3 and Department Entree ID 7 as 3-7)
- Repeat the same steps to show Revenue CLass - Food ID 3 and Department ID 11
- Select Save Filter.
To run the report:
- Select Filter by Items.
- Choose the saved filter (Entree and Dessert Department).
- Apply.
You can then drill down to:
- Stores
- Employees
- Menu Items
Filter by Menu Items
To filter specific menu items:
- Open Product Mix.
- Group by Menu Items.
- Note the Menu Item IDs in the first column.
Note: If you’ve added promotional items, you can filter specifically for those.
Example: Promotional Items Filter
Menu Item IDs:
- 15 (Hot Fudge Cake)
- 36 (All-Star Breakfast)
- 45 (Christy’s Apple Pie)
Setup
- Select Filter by Items.
- In the Menu Items row, enter 15, 36, 45 (15-Hot Fudge Cake, 36-All-Star Breakfast, and 45- Christy’s Apple Pie).
- Check Global.
- Select Save Filter.
To run:
- Select Filter by Items.
- Choose the saved filter (Promotional Items by Menu Item report).
- Apply.
The report will display by store.
You can change Group By and select Menu Items to analyze individual item performance.
You may drill down to:
- Store
- Employee
Key Reminders
- Always select "Clear Filter" when finished.
- Check the Report Name at the top to confirm which filter is active.
- You can drill on any item for deeper analysis.
- Use Day Parts and time intervals for advanced sales insights.
